
Birria Tacos at Maria’s Cuisine Food Truck

Maria’s Cuisine food truck in Old Town has some amazing birria tacos if you have not tried them yet. They have a full menu of your typical Mexican staples such as burritos, quesadillas, tacos, tostadas, tamales, etc. But the birria Tacos and Quesadillas are where it is at.
Let’s talk about birria. It’s a traditional Mexican dish of slow cooked meat (typically goat or beef) in an amazing broth made of peppers, herbs, and spices which turn the meat a nice reddish color. The broth is to die for. In some cities, there are places that only serve birria, called birrierias, it’s just that good!
Maria’s birria tacos are traditionally served with the meat from the birria along with cilantro, onions, and cheese. The tacos are then fried in the birria sauce to give them a crispy, golden crust with a reddish tint. They are served with a side dish of the broth to dip your tacos in (consommé).
